Ingredients:

  • For the Cake:

    • 1 ½ cups all-purpose flour
    • 1 cup granulated sugar
    • 1 ½ teaspoons baking powder
    • ¼ teaspoon salt
    • ½ cup unsalted butter, softened
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup milk
    • 1 ½ cups fresh or frozen blueberries (if using frozen, do not thaw)
  • For the Streusel Topping (Optional):

    • ¼ cup granulated sugar
    • ¼ cup all-purpose flour
    • 2 tablespoons unsalted butter, cold and cut into small pieces
    • ¼ teaspoon ground cinnamon
  • For the Glaze (Optional):

    • 1 cup powdered sugar
    • 2-3 tablespoons milk
    • ½ teaspoon vanilla extract

Instructions:

1. Preheat Oven:

  • Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2. Prepare the Cake Batter:

  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

4. Assemble and Bake:

  • Pour the batter into the prepared cake pan and smooth the top.
  • Sprinkle the streusel topping evenly over the batter if using.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

5. Prepare the Glaze (Optional):

  • While the cake is baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
